Caledonian Sleeper teamed up with Scotland’s Natural Larder (SNL) to bring guests a little taste of wild Scotland by highlighting the country’s naturally available produce, demonstrating how and where to find ingredients and what to do with them.
The initiative by Scottish Natural Heritage aims to reconnect people with local and natural produce that has been harvested, fished, foraged or hunted, encouraging best practice and responsible use of natural food resources.
Guests travelling from London Euston to Inverness on 21 September were introduced to wild Scottish delights such as potted rabbit and smoked venison, stinging nettles and garlic pesto as well as Atlantic seaweed and hedgerow fruit leathers and jellies. While sampling these local delights, guests were also advised of the provenance of the ingredients and presented with the recipes for each taster as well as a gift bag of samples to take home.
Catriona Frankitti from SNL said, “It was a pleasure to explore Scottish wild, seasonal foods with the enthusiastic and knowledgeable guests on board the Caledonian Sleeper. We were very impressed by how keen the guests were to try something new and they were surprised and delighted with the autumn foraged foods we presented which is exactly what we hope for when introducing people to Scotland’s Natural Larder!”
Ryan Flaherty, Guest Experience Director for Caledonian Sleeper said, “With 92% of produce sourced within 50 miles of our food production operation in Dingwall, we refresh our menu seasonally and take great pride in working with a range of local suppliers as well as new, local business partners on a monthly basis to showcase the best of Scotland to our guests travelling on board.”
